Ingredients

  • Yuca, boiled and mashed — 500 g (1 lb 2 oz)
  • Grated cheese — 100 g (3.5 oz)
  • Eggs — 2
  • Plain flour — 60 g (2 oz)
  • Oil for deep frying
  • Sugar, for the syrup — 400 g (14 oz)
  • Water, for the syrup — 480 ml (16 fl oz)
  • Cinnamon stick, for the syrup — 1
  • Cloves, for the syrup — 4

Method

  1. Combine the mashed yuca, grated cheese, eggs and flour into a smooth, firm dough.
  2. Shape into small balls.
  3. Heat oil to 175°C (350°F) in a deep pan.
  4. Fry the balls in batches until deeply golden and cooked through, about 5–6 minutes.
