Ingredients

  • Plain flour — 2 cups (250 g / 9 oz)
  • Active dry yeast — 1 tsp
  • Warm milk — 1/2 cup (120 ml / 4 fl oz)
  • Yoghurt — 1 tbsp
  • Sugar — 1 tsp
  • Salt — 1/2 tsp
  • Cooked chickpeas — 2 cups (340 g / 12 oz)
  • Onion, chopped — 1
  • Garlic, minced — 2 cloves
  • Turmeric — 1 tsp
  • Curry powder — 1 tsp
  • Oil — 2 tbsp
  • Water — 1 cup (240 ml / 8 fl oz)

Method

  1. Dissolve the yeast and sugar in the warm milk and let sit for 10 minutes until foamy.
  2. Combine the flour and salt in a bowl, then add the yeast mixture and yoghurt, kneading for 8 minutes into a smooth, soft dough.
  3. Cover and let rise for 1 hour, or until doubled.
  4. For the curry, heat the oil in a saucepan and sauté the onion and garlic until softened.
  5. Add the turmeric and curry powder, cooking briefly, then add the chickpeas and water, simmering for
  6. 15 minutes until thickened.
  7. Divide the risen dough into portions, roll or stretch each into an oval, and cook on a hot dry pan for
