Method

  1. Soak the munkoyo root in 250 ml of the water for at least 2-3 hours, or overnight, to release its natural enzymes.
  2. Mix the maize meal with 500 ml of the water to form a smooth paste.
  3. Bring the remaining 750 ml of water to a boil in a saucepan, then whisk in the maize paste. Cook for 5-6 minutes, stirring, until slightly thickened. Remove from heat and cool to room temperature.
  4. Strain the munkoyo root soaking liquid and stir it into the cooled maize mixture.
  5. Pour into a large glass jar or jug and cover loosely with a clean cloth to allow fermentation gases to escape.
  6. Leave at room temperature for 24-48 hours, tasting periodically, until it develops a pleasantly tangy, slightly sweet flavour.
  7. Strain through a fine sieve into a clean jug, stir in sugar to taste, chill well, and serve cold.
