Ingredients

  • - 750 ml dry white wine (3 cups dry white wine)
  • - 120 ml honey (1/2 cup honey)
  • - 2 whole black peppercorns
  • - 1 bay leaf

Method

  1. Combine the wine, honey, peppercorns and bay leaf in a small saucepan.
  2. Warm gently over low heat, stirring, until the honey has fully dissolved - do not boil.
  3. Simmer very gently for 5 minutes to lightly infuse the spices.
  4. Strain into a serving jug, discarding the peppercorns and bay leaf.
  5. Serve slightly warm or at room temperature, in the traditional Roman style.
