Cultural Background: Muchomo, skewered and grilled meat, is a fixture of Ugandan social life, typically sold roadside or at bars where friends gather in the evening to share a plate straight off the grill. Beef and goat are the most common choices, often eaten with a pinch of salt or a spicy tomato sauce called kachumbari.

Tips: Marinate for several hours, or overnight, for even deeper flavour if time allows. Turn the skewers regularly over high heat so they char evenly without drying out.

Variations: Use chicken thigh pieces for a quicker-cooking version. Add a pinch of chili powder to the marinade for a spicier finish. No traditional vegetarian version exists for this specific dish. Not applicable.

Storage: Refrigerate cooked muchomo in an airtight container for up to 2 days.

Reheating: Reheat on a hot griddle pan for 2-3 minutes per side, or briefly under a hot grill.
