Method

  1. Whisk the rice flour, coconut milk, sugar, yeast, and salt together with the warm water until smooth.
  2. Cover and let ferment at room temperature for 1 to 2 hours until bubbly.
  3. Heat a small non-stick skillet over medium heat and lightly grease it.
  4. Pour in a small ladle of batter, swirling to coat the pan thinly.
  5. Cook for 2 to 3 minutes until the edges lift and the underside is golden, then flip and cook briefly on the other side.
  6. Repeat with the remaining batter and serve warm.
