Ingredients

  • Dried black-eyed peas, soaked and peeled — 300 g (10.5 oz)
  • Onion, chopped — 1
  • Red bell pepper, chopped — 1
  • Scotch bonnet pepper, chopped — 1
  • Palm oil — 60 ml (2 fl oz)
  • Eggs — 2
  • Ground crayfish — 1 tbsp
  • Salt — to taste

Method

  1. Blend the soaked, peeled black-eyed peas with the onion, bell pepper and scotch bonnet, adding a little water as needed, until smooth.
  2. Whisk in the palm oil, eggs, ground crayfish and salt until well combined.
  3. Pour the mixture into greased ramekins or foil parcels.
  4. Steam for 45–50 minutes until firm and set.
  5. Let cool slightly, then unmould and slice for serving.
