Regional Variations: Some versions are sold and used as a dry spice blend rather than a wet paste; the fresh paste form used tableside is the condiment.
Storage: As a dry powder, keeps many months in an airtight container; as a fresh paste, refrigerate and use within 1–2 weeks.
