Introduction: Mishkaki, small skewers of marinated grilled meat, are one of Tanzania's most popular street foods, sold

Cultural Background: Mishkaki, small skewers of marinated grilled meat, are one of Tanzania's most popular street foods, sold

Tips: Marinate for as long as you can — even overnight makes a noticeable difference to the flavour. Don't overcrowd the skewers, leaving a little space between pieces so they cook evenly.
Variations: Use chicken instead of beef or goat for a quicker-cooking version. Add small chunks of bell pepper or onion between the meat pieces. This dish is defined by grilled meat; no authentic vegetarian version exists.
Storage: Refrigerate cooked skewers in an airtight container for up to 2 days.
Reheating: Reheat in a hot dry pan or under a grill for 3–4 minutes, turning, until warmed through.
