Method

  1. Combine ground almonds, sugar, egg whites and lemon zest into a smooth, cohesive paste.
  2. Chill the mixture for 30 minutes to firm up slightly.
  3. Preheat oven to 180°C (350°F) and line a baking tray with parchment.
  4. Shape the mixture into small balls or traditional oval shapes.
  5. Place on the prepared tray, brush lightly with beaten egg yolk, and top each with a piece of candied fruit or a whole almond.
  6. Bake for 12-15 minutes until lightly golden on top.
  7. Let cool completely before serving.
