Ingredients

  • - 100g (3/4 cup) arrowroot starch
  • - 500ml (2 cups) coconut milk
  • - 100g (1/2 cup) sugar
  • - 1/4 tsp salt
  • - 1/2 tsp vanilla extract

Method

  1. Whisk the arrowroot starch with 125ml of the coconut milk in a bowl until smooth.
  2. Heat the remaining coconut milk, sugar and salt in a saucepan until just simmering.
  3. Whisk in the arrowroot mixture and continue stirring over low heat for 4-5 minutes until thick and glossy.
  4. Stir in the vanilla extract.
  5. Pour into a serving dish or individual moulds.
  6. Chill for at least 2 hours until set before serving.
