Ingredients

  1. Bring the water to a boil in a large saucepan and whisk in the maize meal to make a thin porridge. Cook for

  3. Stir the plain flour into the cooled porridge to help kick-start fermentation.
  4. Pour the mixture into a clean glass or ceramic jar, cover loosely with a clean cloth (not an airtight lid, so gases can escape), and leave in a warm spot for 2 to 3 days, stirring once a day, until pleasantly sour.
  5. Once fermented to taste, strain through a fine sieve to remove any solids.
  6. Stir in the sugar and salt to taste, then refrigerate until well chilled.
  7. Serve cold, stirring well before pouring as the mixture settles.
