Ingredients

  • Minced pork — 500 g (1 lb 2 oz)
  • Carrot, finely grated — 1
  • Finely chopped onion — 1/4 cup

  • Egg — 1
  • Soy sauce — 2 tbsp

  • Spring roll wrappers — 25

Method

  1. Combine the minced pork, carrot, onion, garlic, egg, soy sauce, salt and pepper, mixing thoroughly.
  2. Place a spoonful of the mixture along one edge of a spring roll wrapper.
  3. Roll tightly into a thin cylinder, sealing the edge with a little water.
  4. Repeat with the remaining filling and wrappers.
  5. Heat oil to 175°C (350°F) in a deep pan.
  6. Fry the spring rolls in batches for 4–5 minutes until deeply golden and crisp.
  7. Drain on paper towels and serve hot with sweet chilli sauce.
