Ingredients
- 250 g (about 2 cups) dried peaches
- 500 ml (2 cups) water
- 60 g (1/4 cup) sugar, or to taste
- 1 cinnamon stick

Method
- Place the dried peaches in the saucepan and cover with the water.
- Let soak for 1–2 hours to soften slightly, or proceed directly if short on time.
- Add the sugar, cinnamon stick and lemon zest if using.
- Bring to a gentle simmer over medium-low heat, then cover and cook for 30–40 minutes, stirring occasionally, until the peaches are soft and plump and the liquid has reduced into a light syrup.
- Remove the cinnamon stick and serve warm or chilled, spooned into small bowls with a little of the syrup.
