Liechtenstein Braided Butter Bread (Liechtensteiner Zopf)

Ingredients
- 500 g (4 cups) plain flour
- 10 g (2 tsp) fine salt
- 50 g (1/4 cup) sugar
- 10 g (1 tbsp) instant yeast
- 250 ml (1 cup) whole milk, lukewarm
- 70 g (5 tbsp) soft butter
- 1 large egg, plus 1 egg yolk for the dough
- 1 egg, beaten, for glazing
Method
- In a large bowl, combine the flour, salt, sugar and yeast.
- Add the lukewarm milk, softened butter, egg and egg yolk, and mix to a shaggy dough.
- Knead for 10 minutes by hand or 6 minutes in a stand mixer until smooth and elastic.
- Cover and let rise in a warm place for about 1 hour, until doubled in size.
- Divide the dough into 3 equal strands and braid them together, tucking the ends underneath.
- Place on a lined baking tray, cover loosely, and let rise for a further 45 minutes.
- Preheat the oven to 180C (350F). Brush the loaf generously with beaten egg.
- Bake for 30-35 minutes until deep golden brown and it sounds hollow when tapped underneath.
- Cool on a wire rack for at least 20 minutes before slicing.
