Ingredients
- 4 large eggs
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 1 green bell pepper, diced
- 3 garlic cloves, minced

- 1 tsp paprika

- Heat olive oil in a wide skillet over medium heat and saute the onion and pepper for 5-6 minutes until softened.

- Cover the skillet and cook for 5-6 minutes until the egg whites are set but yolks remain soft.
- Garnish with parsley or coriander and serve immediately straight from the skillet with flatbread.
