  • 4 rainbow trout fillets (about 150 g/5 oz each), skin on
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour, for dusting
  • 2 tbsp butter
  • 1 tbsp sunflower oil
  • 2 garlic cloves, thinly sliced
  • 1 lemon, half juiced and half cut into wedges
  • 2 tbsp chopped fresh parsley

Method

  1. Pat the trout fillets completely dry and season both sides with salt and pepper.
  2. Dust lightly with flour, shaking off any excess.
  3. Heat the butter and oil together in the frying pan over medium-high heat until foaming.
  4. Lay the fillets skin-side down in the pan and cook for 3–4 minutes without moving them, until the skin is crisp and golden.
  5. Flip carefully with the fish spatula and cook a further 2–3 minutes on the flesh side until just cooked through.
  6. Add the garlic slices to the pan for the last minute, then squeeze over the lemon juice and swirl to make a light pan sauce.
  7. Plate the fillets, spoon over the pan juices and garlic, scatter with parsley, and serve with lemon wedges.
