Ingredients

  • - 150g (1 cup) chuño (freeze-dried potato), soaked overnight
  • - 300g (10 oz) lamb or beef, cut into chunks
  • - 100g (1/2 cup) dried white beans, soaked
  • - 2 potatoes, diced
  • - 1 carrot, diced
  • - 80g (1/2 cup) peas
  • - 50g (1/4 cup) rice
  • - 1 onion, finely chopped
  • - 2 garlic cloves, minced
  • - 1 tbsp aji amarillo paste
  • - 2 litres (8 cups) beef or lamb stock
  • - Fresh mint and parsley, chopped, to finish
  • - Salt to taste

Method

  1. Peel the soaked chuño and set aside.
  2. In a large pot, brown the meat, then add onion, garlic and aji amarillo paste, cooking until fragrant.
  3. Add the stock and drained beans, bring to a simmer, and cook for 45 minutes.
  4. Add the chuño, potato, carrot and rice, and continue simmering for 30 minutes.
  5. Add the peas in the last 10 minutes of cooking.
  6. Season with salt, stir in fresh mint and parsley just before serving, and serve piping hot.
