Ingredients

  • - 400g Dark rye bread, cut into chunks
  • - 3l Water
  • - 150g Sugar
  • - 5g Active dry yeast
  • - 20g Raisins

Method

  1. Preheat the oven to 180C (350F) and toast the rye bread chunks on a tray for 15-20 minutes until deep brown and dry, but not burnt.
  2. Place the toasted bread in a large jar or bucket and pour over the water; leave to soak for 4-6 hours or overnight.
  3. Strain the liquid through muslin cloth into a clean container, pressing the bread well and discarding the solids.
  4. Stir in the sugar and yeast until dissolved.
  5. Cover loosely with a cloth and leave at room temperature for 12-24 hours until small bubbles appear on the surface.
  6. Strain again if needed, add a few raisins to each bottle, and seal.
  7. Chill in the refrigerator for at least 4 hours before serving cold.
