Ingredients

  • Ripe bananas, mashed — 4
  • Plain flour — 1 cup (120 g / 4 oz)
  • Sugar — 2 tbsp
  • Baking powder — 1 tsp
  • Coconut milk — 1/4 cup (60 ml / 2 fl oz)
  • Egg — 1
  • Oil, for frying
  • Of salt — pinch

Method

  1. Mash the bananas in a bowl until smooth.
  2. Add the flour, sugar, baking powder, coconut milk, egg and salt, mixing to a thick, smooth batter.
  3. Heat a little oil in a frying pan over medium heat.
  4. Spoon small rounds of batter into the pan and cook for 2–3 minutes per side until golden and cooked through.
  5. Serve warm.
