Method

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Combine the grated sweet potato, sugar, coconut milk, melted butter, spices, vanilla and salt in a large bowl.
  3. Stir in the raisins if using.
  4. Pour the mixture into the prepared baking dish, smoothing the top.
  5. Bake for 60-70 minutes until set and a deep golden brown on top.
  6. Cool for at least 20 minutes before slicing and serving.
