Ingredients

  • 1 Lao baguette (Khao Jee)
  • 2 tbsp pork pâté
  • 50 g (1.8 oz) Lao sausage or ham, sliced
  • 2 tbsp pickled carrot and daikon
  • 1 handful fresh coriander
  • 2-3 slices cucumber
  • 1 tbsp mayonnaise
  • 1 tbsp chilli sauce
  • 1 tbsp soy sauce

Method

  1. Slice the baguette lengthwise, leaving one side hinged.
  2. Spread pork pâté evenly along the inside of the bread.
  3. Layer in sliced sausage or ham, pickled carrot and daikon, and cucumber.
  4. Drizzle with mayonnaise, chilli sauce and soy sauce.
  5. Top with fresh coriander leaves.
  6. Press gently closed and slice in half to serve.
