Method
- Combine mince, cumin, savory, baking soda, sparkling water, salt and pepper in a bowl; knead well for a few minutes until sticky.
- Rest the mixture in the fridge for at least 1 hour, ideally overnight.
- Shape into small elongated logs about 10 cm (4 in) long.
- Grill over medium-high heat, turning occasionally, for 10-12 minutes until charred outside and cooked through.
- Serve hot in flatbread with lyutenitsa or a simple relish.
