  • 500 g (1 lb 2 oz) Cassava, peeled and cubed
  • 150 ml (2/3 cup) Coconut cream
  • 2 tbsp Lime juice
  • 2 stalks Spring onion, sliced
  • 1 small Chilli, finely chopped
  • 1/2 tsp Salt

Method

  1. Boil cassava cubes in salted water for 20 minutes until fork-tender.
  2. Drain well and let cool to warm room temperature.
  3. In a bowl, whisk coconut cream, lime juice and salt.
  4. Add cassava, spring onion and chilli, tossing gently to coat.
  5. Serve warm or at room temperature.
