Ingredients

  • Distinguished from other regional garam masalas by the prominent inclusion of fennel seed and dried ginger powder (saunth), alongside the standard warming spices

Method

  1. Toast whole spices, cool, grind.
  2. Essential — toast over medium-low heat, shaking constantly, until aromatic (2-4 minutes); do not let any component scorch.

Origin: Kashmir, northern India.

Use: Central to Kashmiri Pandit and Kashmiri Muslim cooking traditions alike, though the two communities’ broader spicing philosophies differ (notably in onion/garlic use).

Classic Dishes: Rogan josh; yakhni-based curries.

Storage: Ground blend keeps 2-3 months in a sealed, dark container before losing potency; whole spices can be stored premixed for over a year and ground fresh as needed.

Variations: The fennel-forward profile distinguishes it clearly from the more cumin/coriander-forward garam masalas of the plains.

Substitutions: Pre-made commercial garam masala varies enormously in quality; a fresh, home-toasted-and-ground version is markedly more aromatic than most shelf products. Base garam masala plus a spoonful of ground fennel seed and dried ginger.
