Ingredients
- Desiccated coconut (or freshly grated coconut) — 200 g (2 cups)
- Sugar — 200 g (1 cup)
- Water — 100 ml (scant 1/2 cup)
- Roasted peanuts, roughly chopped — 100 g (2/3 cup)
- Ground cardamom — 1/4 tsp
- Salt — a pinch
Method
- Combine the sugar and water in a heavy-bottomed saucepan and heat over medium heat until the sugar dissolves.
- Simmer for 3–4 minutes, until it forms a light syrup.
- Stir in the desiccated coconut, cardamom and salt, and cook, stirring frequently, for 8–10 minutes, until the mixture thickens and starts to pull away from the sides of the pan.
- Stir in the chopped peanuts and mix well to combine evenly.
- Pour the mixture onto a parchment-lined tray and spread into an even layer, about 1.5 cm (1/2 in) thick.
- Let cool and set at room temperature for at least 1 hour, then cut into small squares or diamonds to serve.
