  6. Let the salad stand for 15 minutes before serving, sprinkled with fresh dill.

Introduction: A crisp, everyday cabbage salad dressed simply with vinegar, oil and a touch of sugar, kapsasalat is a light counterpart to Estonia's heavier winter dishes and a familiar side at family meals throughout the year.

Cultural Background: A crisp, everyday cabbage salad dressed simply with vinegar, oil and a touch of sugar, kapsasalat is a light counterpart to Estonia's heavier winter dishes and a familiar side at family meals throughout the year.

Tips: Massaging the cabbage with salt before dressing softens its texture and helps it absorb the dressing. Letting the salad rest allows the flavours to develop fully.

Variations: Add thinly sliced apple for a sweeter variation. A few caraway seeds can be added for a more traditional, earthy flavour. Sour cream can be stirred in at the end for a creamier version. This dish is naturally vegan as written, using only vegetables, oil, vinegar and seasoning with no animal products.

Storage: Store covered in the refrigerator for up to 3 days; the cabbage will continue to soften slightly.

Reheating: This is a cold salad and is not reheated.

FAQs:

Q: Why do I need to massage the cabbage with salt?
A: It draws out excess moisture and softens the cabbage's texture, making the salad more tender and easier to eat.

Q: Can this salad be made ahead?
A: Yes, it keeps well for a few days and often tastes better the next day once the flavours have had time to develop.
