Ingredients

  • - Fresh ginger, peeled and roughly chopped -- 250 g (1 cup)
  • - Water -- 1.5 litres (6 cups)
  • - Granulated sugar -- 150 g (3/4 cup)
  • - Lime, juiced -- 1 (1)
  • - Pineapple chunks (optional) -- 100 g (3/4 cup)

Method

  1. Blend the ginger with about 500 ml (2 cups) of the water until finely pulped.
  2. Strain the pulp through a fine sieve or cheesecloth, pressing to extract as much liquid as possible; discard the fibrous solids.
  3. If using pineapple, blend it with a little water and strain separately, adding the juice to the ginger liquid.
  4. Stir in the remaining water, sugar and lime juice until the sugar dissolves.
  5. Taste and adjust sweetness or ginger intensity by diluting with more water if too strong.
  6. Chill thoroughly and serve over ice.
