Introduction: Cracked wheat simmered with chicken or lamb into a thick, porridge-like savoury dish.
Cultural Background: Jareesh is a traditional Saudi dish made from coarsely cracked wheat, slow-cooked with meat into a comforting, hearty porridge-like main, a taste of Saudi Arabia's Bedouin culinary heritage.
Tips: Stir occasionally during the long simmer to prevent the wheat from sticking to the bottom of the pot. Add extra water if the mixture becomes too thick before the meat is fully tender.
Variations: Some households mash the meat into the jareesh for a completely smooth texture; add a dollop of ghee on top before serving for extra richness.
Storage: Store in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat gently on the stovetop over low heat, adding a splash of water or stock to loosen.
