Ingredients

  • Lamb, bone-in, cut into pieces — 600 g (1.3 lb)
  • Onion, chopped — 1
  • Carrot, sliced — 1
  • Plain flour — 2 tbsp
  • Butter — 2 tbsp
  • Egg yolk — 1
  • Sour cream or yoghurt — 1/4 cup (60 ml / 2 fl oz)
  • Lemon juice — 1 tbsp
  • Water — 6 cups (1.4 litres / 48 fl oz)
  • Salt and pepper — to taste
  • Chopped parsley, to garnish

Method

  1. Place the lamb, onion, carrot and water in a large pot, bring to a boil, then reduce to a simmer and cook for 1–1.5 hours until the meat is tender, skimming any foam.
  2. Remove the lamb, shred or chop the meat off the bone, and discard the bones.
  3. Return the meat to the pot.
  4. In a small saucepan, melt the butter and whisk in the flour to make a light roux, cooking for 2 minutes.
  5. Whisk the roux into the soup, stirring until slightly thickened.
  6. In a small bowl, whisk the egg yolk with the sour cream and lemon juice, then temper by whisking in a ladleful of the hot soup.
  7. Stir this mixture back into the pot, off the heat, to thicken without curdling.
  8. Season with salt and pepper, and garnish with parsley before serving.
