Irish Soda Farls

Ingredients
- 250g plain white flour
- 1/2 tsp bicarbonate of soda
- 1/2 tsp salt
- 175ml - 200ml buttermilk
Method
- Sift the plain flour, bicarbonate of soda, and salt into a bowl.
- Pour in most of the buttermilk and mix quickly with a fork until a soft dough forms. It should be manageable, not sticky.
- Turn out onto a heavily floured surface and pat down gently into a flat circle, roughly 1.5cm thick.
- Cut the circle cleanly into four equal triangular quadrants (farls).
- Heat a dry, heavy frying pan or cast-iron griddle over a low-medium heat.
- Place the farls into the pan. Cook slowly for 6-8 minutes on each side until they puff up significantly and turn a lovely speckled brown. Stand them briefly on their thick outer edges to ensure the sides cook through. Split open and slather with butter.
Another northern staple, soda farls are made from a basic white soda bread dough but flattened and cooked entirely on a hot dry griddle or frying pan, resulting in a soft, airy roll that splits beautifully for frying or toasting.
