Irish Cheddar & Ballymaloe Relish Toastie

Ingredients

  • 2 thick slices of white farmhouse bread
  • 1.5 tbsp Ballymaloe tomato relish
  • 60g mature Irish cheddar, sliced or grated
  • 15g salted Irish butter, softened

Method

  1. Spread the softened butter evenly on one side of each slice of bread (the buttered sides will face outward in the pan).
  2. Flip the bread over. Spread the tomato relish over the unbuttered side of one slice.
  3. Top the relish with the grated or sliced cheddar cheese, and place the second slice of bread on top, buttered side facing up.
  4. Heat a non-stick frying pan over medium heat. Toast the sandwich for 3-4 minutes per side, pressing down gently, until the bread is golden-brown and the cheddar is beautifully melted.
