Introduction: Green plantains simmered in a savoury tomato and meat sauce, a beloved and comforting Rwandan main course.

Cultural Background: Plantains are a versatile staple across Rwanda, and this savoury version, simmered in a rich sauce with meat, offers a hearty, satisfying alternative to the more common sweet or fried preparations.

Tips: Use firm, green (unripe) plantains for this savoury preparation, as ripe plantains would be too sweet and soft. Simmer gently so the plantain cooks through without falling apart completely.

Variations: Add a little chopped spinach or other greens for extra nutrition. Adjust the meat quantity to preference, or omit for a vegetarian version using vegetable stock.

Storage: Refrigerate in an airtight container for up to 3 days.

Reheating: Reheat gently on the stovetop over low heat, stirring occasionally, until warmed through.

FAQs:

Q: Can ripe plantains be used instead of green?

A: No, green (unripe) plantains hold their shape and have a starchy, savoury quality essential to this dish; ripe plantains are too sweet and soft.

Q: What is ibitoki typically served with?

A: It's a substantial dish on its own, though it can be accompanied by a simple salad.
