Ingredients
- Corn tortillas — 4
- Eggs — 4
- Tomatoes, chopped — 4
- Onion, chopped — 1
- Garlic, minced — 2 cloves
- Serrano chiles, chopped — 1–2
- Oil, plus extra for frying tortillas and eggs — 2 tbsp

Method
- Heat 2 tbsp oil in a pan and sauté the onion, garlic and chile until softened.
- Add the chopped tomatoes and cook for 10 minutes until broken down into a thick sauce; season with salt. For a smoother sauce, blend briefly and return to the pan.
- In a separate pan, lightly fry the tortillas in a little oil for about 30 seconds per side, just until slightly crisp at the edges but still pliable; keep warm.
- In the same pan, fry the eggs to your preference.
- Place a tortilla on each plate, top with a fried egg, and spoon the tomato-chile sauce generously over the top.
- Garnish with crumbled queso fresco and chopped coriander before serving.
