- If using genuine fresh palm juice, serve immediately after tapping, as it begins to ferment naturally within hours.

Cultural Background: The toddy palm is deeply woven into the culture of central Myanmar, particularly the dry zone around Bagan, where its sap is tapped daily and enjoyed fresh, or fermented into a mild alcoholic drink or boiled down into palm sugar.
Tips: Fresh palm juice is best enjoyed the same day it is tapped, as it naturally starts to ferment quite quickly. If unavailable fresh, this drink is difficult to replicate exactly outside palm-growing regions.
Variations: Allowed to ferment slightly, the juice becomes a mildly alcoholic toddy, traditionally consumed by palm climbers and villagers. Boiled down further, the same sap becomes palm sugar (jaggery), a key Burmese sweetener.
Storage: Best consumed the same day as tapping; it will continue to ferment and change flavour if stored.
