Homemade Irish Hop Lemonade

Ingredients
- 150g sugar
- 200ml water
- 10g citrus-forward hop pellets (from a homebrew store)
- Juice of 4 large fresh lemons
- Sparkling water (to dilute)
Method
- Combine the sugar and water in a saucepan and bring to a simmer to dissolve the sugar.
- Turn off the heat, add the hop pellets, and let steep covered for 10 minutes.
- Strain the hopped simple syrup through a fine coffee filter or cheesecloth to remove all hop residue, then let cool completely.
- To serve, mix the cooled hop syrup with the fresh lemon juice in a large pitcher.
- Divide among glasses filled with ice and top up with crisp sparkling water. Garnish with lemon wheels.
