Ingredients

  • 2 slices of white farmhouse or turnover bread
  • 2 thick slices of high-quality cooked ham
  • 60g mature Irish cheddar, grated
  • 1 spring onion, finely sliced into tiny rings
  • 15g salted Irish butter, softened

Method

  1. Butter one side of each slice of bread generously (these buttered faces will touch the hot pan directly).
  2. Flip the slices over so the dry sides face up. Scatter half of the grated cheddar cheese across one slice.
  3. Layer the thick slices of ham over the cheese, and scatter the finely sliced spring onions directly on top of the ham.
  4. Top with the remaining grated cheddar cheese—this acts as a glue to bind the sandwich together from both sides.
  5. Place the second slice of bread on top, buttered side facing outward.
  6. Heat a non-stick frying pan over medium-low heat. Cook the toastie for 3-4 minutes on each side, pressing down firmly with a spatula, until the exterior is beautifully lacquered and golden-brown, and the cheese inside has completely melted.

The quintessential Irish pub lunch toastie, given a slight gourmet uplift. Thick-cut honey- crusted ham, mature cheddar, and finely chopped spring onions are pan-fried in butter until gooey.
