Ham, Cheese & Spring Onion ‘Toastie’ Melt

Ingredients
- 2 slices of white farmhouse or turnover bread
- 2 thick slices of high-quality cooked ham
- 60g mature Irish cheddar, grated
- 1 spring onion, finely sliced into tiny rings
- 15g salted Irish butter, softened
Method
- Butter one side of each slice of bread generously (these buttered faces will touch the hot pan directly).
- Flip the slices over so the dry sides face up. Scatter half of the grated cheddar cheese across one slice.
- Layer the thick slices of ham over the cheese, and scatter the finely sliced spring onions directly on top of the ham.
- Top with the remaining grated cheddar cheese—this acts as a glue to bind the sandwich together from both sides.
- Place the second slice of bread on top, buttered side facing outward.
- Heat a non-stick frying pan over medium-low heat. Cook the toastie for 3-4 minutes on each side, pressing down firmly with a spatula, until the exterior is beautifully lacquered and golden-brown, and the cheese inside has completely melted.
The quintessential Irish pub lunch toastie, given a slight gourmet uplift. Thick-cut honey- crusted ham, mature cheddar, and finely chopped spring onions are pan-fried in butter until gooey.
