Ingredients
- 150 g (5 oz) Halloumi, sliced
- 150 g (5 oz) Lountza (smoked pork loin), sliced thin
- 4 Pita bread
- 1 large Tomato, sliced
- 1 cup Lettuce, shredded
- 150 g (5 oz) Talattouri (see Appetizers)
- 1 tbsp Olive oil
Method
- Heat olive oil in a grill pan over medium-high heat.
- Grill halloumi slices for 90 seconds per side until golden.
- In the same pan, quickly sear the lountza slices for 30-45 seconds per side, just to warm through and lightly crisp the edges.
- Warm the pita bread briefly on the grill pan.
- Spread talattouri over each pita, then layer with lettuce, tomato, grilled halloumi and lountza.
- Roll tightly into a wrap and serve immediately while warm.
