Ingredients

  • Ground grains of paradise (or, depending on regional naming intent, Piper guineense/uziza) combined with salt and sometimes a small amount of chile as a simple table seasoning

Method

  1. Simply grind the pepper component and combine with salt.
  2. Light toasting of the pepper component optional but common.

Origin: West Africa broadly. Note that ‘Guinea pepper’ is an ambiguous name applied to more than one spice.

Use: A simple table seasoning or general-purpose pepper substitute.
