Ingredients
- 150 g (1 cup) raw peanuts, roasted and ground
- 1 onion, chopped
- 2 carrots, diced
- 2 tomatoes, chopped
- 200 g (7 oz) leafy greens, shredded
- 1 litre (4 cups) vegetable or chicken stock
- 2 tbsp cooking oil
- 1/2 tsp chilli flakes (optional)
- Salt, to taste
Method
- Heat the oil in a saucepan and soften the onion and carrots for 5 minutes.
- Add the tomatoes and cook for a further 3-4 minutes until softened.
- Pour in the stock and bring to a simmer, cooking for 15 minutes until the carrots are tender.
- Stir in the ground peanuts and simmer for a further 10 minutes, stirring occasionally, until the soup thickens slightly.
- Add the leafy greens and chilli flakes if using, and simmer 5 more minutes until the greens have wilted.
- Season with salt and serve hot with a side of maize porridge or bread.
