Ingredients

  • Dried mopane worms, rehydrated in water — 150 g (5 oz)
  • Onion, chopped — 1
  • Tomatoes, chopped — 2
  • Oil — 2 tbsp
  • Chilli powder — 1 tsp (optional)
  • Salt — to taste

Method

  1. Soak the dried mopane worms in water for 30 minutes to rehydrate slightly; drain well.
  2. Heat the oil in a frying pan and sauté the onion until softened.
  3. Add the chopped tomatoes and cook for 5 minutes.
  4. Add the rehydrated mopane worms and chilli powder if using, and fry for 8–10 minutes, stirring occasionally, until crisp and well combined with the onion and tomato.
  5. Season with salt and serve hot as a snack or side.
