Ingredients

  • 200 g Raw pumpkin seeds (mbika), shelled (1 1/2 cups)
  • 15 ml Vegetable oil (1 tbsp)
  • 4g Salt (3/4 tsp)
  • 1g Chili powder (optional) (1/4 tsp)

Method

  1. Preheat the oven to 180°C (350°F).
  2. Toss the pumpkin seeds with the oil, salt and chili powder in a mixing bowl until evenly coated.
  3. Spread the seeds in a single layer on a baking sheet.
  4. Roast for 12-15 minutes, stirring halfway through, until golden and fragrant.
  5. Cool for 5 minutes on the tray before serving — they crisp further as they cool.
