Gourmet Irish Pork Sausage Flatbreads

Ingredients
- 4 high-quality Irish pork sausages
- 2 large soft store-bought flatbreads or naans
- 100g Irish brie cheese (like Wicklow Baun or Cooleeney), sliced
- 1 tbsp honey; 1 tsp fresh thyme leaves
- A small handful of rocket leaves
Method
- Fry or grill the pork sausages for 10-12 minutes until fully cooked through and golden. Slice them diagonally into bite-sized coins.
- Preheat your oven grill or an air fryer to medium heat. Place the flatbreads on a tray and flash-toast them for 1 minute.
- Arrange the hot sausage coins evenly over the flatbreads. Interleave the slices of Irish brie cheese among the sausage pieces.
- Place under the hot grill for 2 minutes until the brie melts completely and bubbles.
- Remove from the heat, drizzle the honey immediately over the bubbling cheese, scatter the fresh thyme leaves, and top with a small handful of fresh rocket before folding and eating.
A contemporary lunchtime twist on classic local pork sausages. Grilled bangers are sliced up and served over soft toasted flatbreads with melted brie and honey.
