Ingredients
- 500g pork belly strips, skin removed and cut into 2cm cubes
- 1 tbsp olive oil; 1 tsp garlic powder; Salt and pepper
- For the sticky glaze: 3 tbsp Irish honey, 2 tbsp wholegrain mustard, 1 tbsp soy sauce, 15g butter
Method
- Preheat your air fryer or oven to 200°C (180°C fan).
- Toss the pork belly cubes in a bowl with the olive oil, garlic powder, salt, and black pepper until completely coated.
- Spread the pork belly bites out in a single layer in your air fryer basket or a roasting tray. Cook for 20 minutes, shaking halfway through, until the fat has rendered and the edges are deeply crispy and golden.
- While cooking, combine the honey, wholegrain mustard, soy sauce, and butter in a small saucepan over low heat, bubbling gently for 2 minutes until cohesive and thick.
- Transfer the hot, crispy pork belly bites directly into a bowl, pour the warm honey-mustard glaze over them, and toss vigorously until every cube is sticky and coated. Serve warm with toothpicks.
