Ingredients

  • 150 g (5 oz) fresh ginger, peeled
  • 1.5 litres (6 cups) water
  • 150 g (3/4 cup) granulated sugar
  • 30 ml (2 tbsp) lime juice
  • 5g (small handful) fresh mint leaves (optional)

Method

  1. Roughly chop the ginger and blend with 500 ml (2 cups) of the water until finely pureed.
  2. Strain the mixture through a fine sieve into a pitcher, pressing to extract all the liquid.
  3. Stir in the sugar until dissolved.
  4. Add the remaining water and lime juice, stirring well.
  5. Chill for at least 1 hour, adding mint leaves if using.
  6. Serve cold over ice.
