Ingredients
- 250 g (1 cup) ghee or clarified butter, softened (8.75 oz)
- 200 g (1.5 cups) icing sugar, sifted, plus extra for dusting (7 oz)
- 300 g (2.5 cups) plain flour, sifted (10.5 oz)
- 1/4 tsp salt
- 24 whole blanched almonds, for decoration
Method
- Preheat the oven to 160°C (320°F).
- Beat the ghee and icing sugar together until light and creamy, about 4 minutes.
- Gradually fold in the flour and salt until a soft, smooth dough forms; do not overmix.
- Rest the dough for 15 minutes at room temperature.
- Shape into small balls, about the size of a walnut, and place on the lined tray, pressing an almond gently into the centre of each.
- Bake for 15-18 minutes until set but still pale - ghraybeh should not brown.
- Cool completely on the tray, as they are very fragile while warm.
- Dust generously with icing sugar before serving.
