Method

  1. Preheat the oven to 180°C (350°F) and grease the pan.
  2. Combine the flour, 1/2 cup sugar, baking powder and salt in a bowl.
  3. Rub in the cold butter with your fingertips until the mixture resembles coarse crumbs.
  4. Mix in the egg and just enough cold water to bring the dough together.
  5. Press the dough evenly into the base and up the sides of the pan.
  6. Arrange the sliced fruit over the dough and sprinkle with cinnamon and the extra 2 tbsp sugar.
  7. Bake for 30-35 minutes until the crust is golden and the fruit is tender.
  8. Drizzle or dollop with sour cream before serving, either warm or at room temperature.
