  • Cooked black beans, with some of their liquid — 340 g (12 oz)
  • Cooked rice — 550 g (1.2 lb)
  • Onion, finely chopped — 1
  • Green bell pepper, finely chopped — 1
  • Oil — 3 tbsp
  • Salt — to taste
  • Chopped coriander, to garnish

Method

  1. Heat the oil in a large frying pan and sauté the onion and pepper until softened.
  2. Add the black beans along with a little of their liquid, and cook for 3–4 minutes.
  3. Add the cooked rice, stirring to combine thoroughly with the beans, mashing some of the beans slightly as you stir to help colour the rice.
  4. Cook for 8–10 minutes, stirring occasionally, until everything is well combined and lightly speckled.
  5. Season with salt and garnish with chopped coriander before serving.
