Ingredients
- 4 Streaky bacon rashers
- 4 Pork sausages
- 2 large Eggs
- 200 g (3/4 cup) Baked beans
- 2 medium Tomatoes, halved
- 100 g (3 1/2 oz) Button mushrooms
- 2 slices White bread, for toast
- 20 g (1 1/2 tbsp) Butter
- 1 tbsp Vegetable oil
Method
- Heat the oil in a large frying pan over medium heat and cook the sausages for 12 to 15 minutes, turning occasionally, until browned and cooked through.
- Add the bacon to the pan and fry for 3 to 4 minutes per side until crisp; remove sausages and bacon and keep warm.
- In the same pan, fry the mushrooms and halved tomatoes, cut-side down, for 3 to 4 minutes until softened.
- Warm the baked beans in a small saucepan over low heat, stirring occasionally.
- Fry the eggs in a little of the remaining fat over medium heat until the whites are set and the yolks still soft, about 2 to 3 minutes.
- Toast the bread and spread with butter.
- Arrange the sausages, bacon, mushrooms, tomatoes, beans, eggs and toast together on warmed plates and serve immediately.
