Fried Plantains with Pepper Sauce

Ingredients
- 600 g (3 large) ripe plantains
- 300 ml (1.25 cups) vegetable oil, for frying
- 200 g (2 medium) tomatoes
- 80 g (1 small) onion
- 1 whole (1 whole) scotch bonnet pepper
- 5g (1 clove) garlic
- 3g (1/2 tsp) salt
Method
- Peel the plantains and slice diagonally into 1 cm (1/2 inch) pieces.
- Blend tomatoes, onion, garlic and scotch bonnet into a smooth sauce.
- Simmer the blended sauce in a small saucepan over medium heat for 12-15 minutes until thickened, seasoning with salt.
- Heat oil in a frying pan over medium heat and fry the plantain slices for 3-4 minutes per side until golden.
- Drain the fried plantains on paper towels.
- Serve hot alongside the pepper sauce for dipping.
